Cooking with Coffee
Beyond being a beverage, coffee is being used more and more in cooking, and not only in desserts. Used ground as a spice or brewed to substitute for or complete a cooking liquid, coffee can add richness and a burst of flavour to several dishes. By integrating coffee into your cooking, you’ll discover a whole new array of aromas.
Here’s how to use it.
Ground coffee:
Ground coffee is excellent as a spice on meat and even with fish and seafood . Because it has an intense flavour, we suggest you use it sparingly at first and then add more according to your taste. Ground coffee is particularly good when mixed into a dry rub for grilled meats because the smoked flavour perfectly complements that of the roasted coffee.
A tip: when you cook using ground coffee as a spice, serve a mild and slightly sweet side dish, such as sweet potatoes or pea shoots, to counter-balance the bitter flavour.
Brewed coffee:
Perfect for deglazing or adding to your cooking liquid, brewed coffee will bring a slightly more subtle coffee flavour to your dishes. It is perfect for livening up your soups , sauces , slow-cooked meals and certain oven-roasted meats, such as ham .
