Black Russian cake
You’re surely familiar with the Black Russian, the popular cocktail made with vodka and coffee liqueur. Well, here’s the dessert version! It’s easy to make and promises to be a real crowd-pleaser at your next potluck. We promise we won’t tell anyone you used a cake mix…
- 1 box white cake mix, your choice
- 1 box chocolate instant pudding mix
- ½ cup white sugar
- 4 eggs
- ¼ cup vodka
- 1 shot of espresso (2 oz.) Bold & Woodsy (Espresso Superiore ), brewed
- ¾ cup water
Preheat the oven to 350°F.
Grease a 20 cm cake pan.
In the blender bowl, add the cake and pudding preparations, white sugar, eggs, vodka, espresso and water. Blend on medium for about 4 minutes, or until smooth.
Spoon into the cake pan and bake for about 40 minutes, or until a toothpick inserted in the centre comes out clean. Let cool.
Prepare the icing by mixing the espresso and icing sugar until smooth. Decorate the cake as desired.
