Apple Coffee Cake Recipe
The perfect snack for me is a coffee and a cake. Sometimes, mixing the two and having a coffee cake is just as good! I like the fruity flavours of something sweet to chew on while I take sips of a coffee. I recommend you try this and I guarantee that whoever you’re sharing it with will want a second piece.
Ingredients
- 1 cup sugar
- 1/2 cup butter flavoured shortening
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour cream
- 1 3/4 cups chopped, peeled tart apples

2 tablespoons of Van Houtte Colombia Fair Trade Dark ground coffee
- TOPPING:
- 3/4 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons cold butter
- 1/2 cup chopped walnuts
- Ground coffee to sprinkle on cake
Directions
In a bowl, mix together cream shortening and sugar. Add eggs and vanilla; mix well. Combine flour, baking powder, baking soda and salt; add to the creamed mixture alternately with sour cream. Stir in apples and ground coffee.
Transfer to two greased 8-in. square baking dishes. For topping, combine brown sugar and cinnamon.
Cut in butter until crumbly. Stir in nuts; sprinkle over batter. Bake at 350° F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Let the cake cool completely. Once it’s cooled, it’s ready to be enjoyed as a brilliant apple coffee cake with a fresh cup of coffee.
