Baking a Christmas Coffee Cake
I got together with Andrea Doucet Donida , a blogger who loves to bake, and together we baked the ideal coffee christmas cake. After getting step by step instructions, we made a Yule Log and glazed it with sweet, coffee flavoured icing. Not only did it taste delicious, but it was a lot of fun to bake!

THE RECIPE:
Ingredients:
For the cake:
4 eggs
125 g of sugar
125 g flour
60 g butter
For the icing:
1 / 2 cup butter
5 cups powdered sugar
8 tablespoons brewed espresso Superiore
Instructions:
For the cake:
Preheat oven to 220 degrees Celsius (428 degrees Fahrenheit).
Separate whites from yolks. Pour the egg yolks and sugar in a bowl and whisk until the mixture whitens. Add flour and continue mixing.
Beat the egg whites until stiff and fold into mixture.
Spread the mixture on a baking sheet lined with wax paper and smooth out the top with spatula.
Bake 5 to 7 minutes. Remove the cookie sheet and cover with a clean moist cloth.
Allow cooling.
For the icing:
Mix the butter and gradually add powdered sugar alternately with the coffee until smooth.
To make the log:
Spread the icing evenly on one side of the cake.
Gently roll the cake and wrap with plastic wrap. Refrigerate for 30 minutes.
Remove the plastic wrap and spread the remaining icing on the log.
Decorate as desired and enjoy!
