Kenya and Cardamom Chicken |

| Ingredients: |
| 8 tbsp Van Houtte Kenya, very finely ground |
| 1 tsp black pepper, finely ground |
| 1 tsp cardamom, finely ground |
| 1 chicken, cut in pieces |
| zest 1 lemon, grated |

Preheat oven to 375º F.
Mix ground coffee, pepper, cardamom and lemon zest, then coat chicken pieces.
Marinate in fridge for 1 hour.
Place mixture and chicken into a glass or ceramic dish.
Bake for about 30 minutes or until chicken is tender.
Makes 4 servings. |
