Cappuccino Muffins |

| Ingredients: |
| ¾ cup cake flour |
| 1 ¼ c all purpose flour |
| ½ c cocoa powder |
| ¼ c brown sugar |
| ¼ c sugar |
| 1 tbsp baking powder |
| 1 tbsp coffee, ground |
| ½ tsp salt |
| 6 tbsp butter, softened |
| 1 c sour cream |
| 1 c table cream (10%) |
| 2 eggs |
| zest of 2 oranges, finely chopped |
| ¾ c bittersweet chocolate, finely chopped |

Preheat oven to 350º F. Mix dry ingredients together. In a separate bowl, mix butter, sour cream, table cream and eggs until smooth.
Add dry ingredients, zest and chocolate to mixture until just moistened.
Lightly grease muffin cups and fill with mixture. Bake for about 15 minutes or until tops are firm.
Makes 12 muffins. |
