Coffee Tabouleh with Columbia

PREPARATION

  1. In a large bowl, cover bulgur with boiling water and let sit for 25 minutes. Drain and set aside.
  2. Once bulgur has reached room temperature, add fresh Italian parsley, red onion, cherry tomatoes, dates, ground Columbia coffee, lemon juice, and olive oil. Mix well.
  3. Season with salt and pepper to taste. Serve at room temperature or cold.
