Caution! This chocolate, almond and coffee cake may release of a high dose of endorphins. It’s also easy to prepare. Simply microwave it for 1 minute.
In a 250 ml (1 cup) capacity mug, mix the sugar, almond powder, flour and baking powder. Add the coffee, oil and vanilla extract. Top with the chopped chocolate.
Bake in the microwave for 1 minute on high.
Garnish with a scoop of ice cream (or other) and coffee grounds.
- 2 tbsp. sugar
- 2 tbsp. almond powder
- 2 tbsp. flour
- 1/2 tsp. baking powder
- 3 tbsp. brewed Van Houtte® Original House Blend recyclable K-Cup® pod coffee*
- 1 tbsp. vegetable oil
- 1/2 tsp. vanilla extract
- Chopped chocolate, to taste
- Vanilla ice cream, Greek yogurt or sweetened crème fraîche
- Coffee grounds
*Can be replaced with ground coffee brewed in a traditional coffee maker.
