This Dutch baby pancake in a mug recipe, which can be enjoyed on the go, is the perfect breakfast to enjoy a little something sweet before a busy day.
Preheat the oven to 450°F (230°C). Place a mug in the oven to heat.
Meanwhile, mix all the batter ingredients, except for the butter, in a bowl.
When the mug is hot, add the butter and allow to melt. Pour in the pancake batter. Bake in the oven for 10 minutes or until the pancake is golden brown and puffed.
For the coffee syrup, bring the coffee and sugar to a boil in a small pan. Allow to simmer until the syrup has slightly thickened.
Drizzle the coffee syrup over the pancake and garnish with the powdered sugar and lemon zest.

- 1/4 cup brewed Van Houtte® Colombian Medium recyclable K-Cup® pod coffee*
- 1/4 cup sugar
- Powdered sugar
- Lemon zest
