In a small skillet, caramelize the shallot with the butter, coffee and honey (can take up to 10 minutes).
Transfer shallot mixture to a mug and mix in the remaining ingredients.
Garnish with the Parmesan and bake in a microwave for about 1 minute 30 seconds on high.
- 1 shallot, minced
- 1 tbsp. butter
- 1 tbsp. brewed Van Houtte® House Blend Dark recyclable K-Cup® pod coffee*
- 1 tsp. honey
- 1 tbsp. red pepper, diced
- 1 tbsp. yellow pepper, diced
- 1 tsp. minced chive
- 1 tsp. minced parsley
- 2 eggs, beaten
- 1 tbsp. grated Parmesan
- Salt and pepper
*Can be replaced with ground coffee brewed in a traditional coffee maker.
