This chipotle chicken recipe, created by Montreal-based chef Sébastien Harrison-Cloutier, is a coffee lover’s dream, combining our Colombian Medium Roast coffee in an easy chipotle sauce chicken marinade that’s sure to have friends and family alike asking for seconds.
Season the chicken with salt and pepper; store in refrigerator.
In a large metal bowl, combine the chipotle purée, coffee, soy sauce, ketchup, brown sugar, steak spice, garlic, paprika and vegetable oil using a whisk.
Pour the marinade over the chicken and let marinate in the refrigerator for 2 hours.
Preheat oven to 325°F.
Lay out the chicken on a baking sheet covered in parchment paper, surrounding it with accompanying vegetables, seasoned with the olive oil, salt and pepper.
Place in the oven and let cook for 1 hour and 30 minutes or until the internal temperature of the chicken has reached 165°F on a meat thermometer.
Remove from the oven and serve.
